- 2 Tbs Peach Chipotle Jam
- 3 ounces Vodka
- Juice of half a lemon
Combine jam, vodka and lemon in a shaker or small lidded jelly/mason jar, shake vigorously until jam is well combined. Pour through a strainer into a glass with ice. Garnish with mint or lemon slice.
Easy Peasy Peach Sorbet
This simple sorbet may just be the perfect finish to a summer meal.
It takes just a few ingredients and is made in advance so there’s no last minute mess making in the kitchen.
Here’s what you’ll need:
- 5 Fresh peaches (you can substitute 4 cups of frozen peach slices if needed)
- 1/4 C milk or almond milk
- 2 Tbsp honey
- Lemon zest from 1 small lemon
- Food processor or high powered blender such as a Vitamix.
Remove the pits from the peaches, dice them into one inch pieces. Place in a sealable bag and freeze them for several hours or overnight.
Place diced frozen peaches into a food processor/blender along with the remaining ingredients and blend until smooth.
Place the mixture into a freezer safe container. You can use a spoon/spatula to create a smooth finish. Wrap tightly or seal the container and allow to freeze at least 5 hours before serving.
